Clams with white wine

Soak the clams in cold and salty water during 30 minutes. Then drain them and let’s them steep. Chop the garlic and parsley and put them in a pan with olive oil. Sauté them. Add the clams and wait for them to open. Add white wine and let the alcohol evaporates. Easy peasy!

Pork cheeks

Season the pork cheeks and flour them, put them in a pan with oil and leave cover the pan. Take them out and let them steep. Sauté a chopped onion, one leek and a carrot cut into pieces. When it’s well done, add the pork cheeks and also add red wine and two glasses of water. Leave to simmer for one hour. Take out the meat and mash the sauce. If you see that the sauce is too dense, add more water. Finally, serve the sauce over the meat. Yummy!

Rabbit with white wine

Put salt into the rabbit before you fry it in a frying pan with oil. Put the same amount of water and wine and mix them. Whenever it’s fried, add a well choppy mix of: salt, crushed garlic, a few strands of saffron, almonds, a parsley stock cube. We let the mix cook itself and we wait until it becomes a sauce. You can add more wine and water. Let’s eat!

Pears with wine

Put red wine, sugar, cinnamon sticks and lemon and orange peels in a casserole and cook over a low heat. Once it begins to boil, stir up a little bit the mix. Put the peeled pears on the casserole and cover it. Lower heat and let the food boil during 30 minutes. Check that pears are well cooked with a stick and take them out. After that, put them in the fridge. Add some vanilla ice cream, you’ll see it’s the best combination!
